MOZZARELLA / bologna sandwiches on the grill

2 tablespoons butter or margarine
2 tablespoons low fat mayonnaise
4 tablespoons cucumber enjoy, drained
1 / 2 pound sliced bologna
1 / 2 pounds of mozzarella cheese, sliced
4 types of leaves, washed and dried well
Split English muffins. Melt in a pan over medium heat 10-inch butter or margarine. Place the bottom half of English muffin pan, divided. Bake until golden brown. Remove the plate and repeat the process with the top half. Mix mayonnaise and cucumber together in a funsmall bowl. In the lower half of muffins, arrange slices of Bologna and cheese on cut sides. Cut to fit. Spread mayonnaise mixture over cheese and sausage. Start with the top half of muffin. Sandwiches back in skillet over medium heat and brown. Serve on a lettuce leaf.
FOOLED ME SANDWICH TOFU Egg Salad
1 / 4 cup chopped celery
2 green onions, chopped
1 / 4 cup mayonnaise
1 tablespoon sweet mustard enjoy
1 tablespoon dill pickles to enjoy
1 tablespoon Dijon mustard
1 / 4Teaspoon turmeric
1 / 4 teaspoon salt, optional
Pinch of freshly ground black pepper
Cayenne pepper 1 / 8 tsp
1 package (12.3 ounces) silken tofu, diced
8 slices whole wheat bread
4 types of leaves
Enjoys in a small bowl the celery, scallions, mayonnaise, cucumbers, Dijon mustard, turmeric, salt (if using) and black pepper and cayenne pepper. Gently stir in tofu. Spread mixture over four slices of bread. Top each with a lettuce leaf and remaining breadSlices.
