Preheat oven to 375 degrees.

Butter, granulated sugar and brown sugar in a large bowl until fluffy. Add egg and beat well. Flour and baking powder, beat until well blended. Stir in oats, apricots and white chips. The over the top oatmeal cookie recipe mixes together a combination of flavors; including oats, chocolate chips, dried cranberries, toffee bits, and chopped walnuts!

Ingredients

1/2 cup shortening

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 egg

1 tablespoon water

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup quick cooking oats

1 cup (6 ounces) semisweet chocolate chips

3/4 cup dried cranberries

1/2 cup chopped walnuts

1/2 cup English toffee bits

Step 1: Preheat oven to 375 degrees F.

Step 2: In a medium bowl, whisk together the flour, baking soda, and salt; set aside.

Step 3: In a large bowl, cream the shortening and sugars together with an electric mixer set on medium-high speed.

Step 4: Beat in the egg, water, and vanilla extract.

Step 5: Gradually add the flour mixture to the creamed mixture.

Step 6: Stir in the remaining ingredients.

Step 7: Drop by tablespoons 3 inches apart onto ungreased cookie sheets.

Step 8: Bake for 10-12 minutes or until lightly browned. Cool for 2 minutes before transferring cookies to a cooling surface.

Makes about 4 dozen cookies.
