How to Properly Cook a Fillet

Fish fillet is a good source of protein. Kids and everyone love fillet because you don't need to separate the fish bone from the fish meat while eating. It's ready to eat anywhere even if you're blindfolded.

Meat of fish cleaned and deboned is fillet. The family of Yellow Fin Tuna is good for fillet, as the Blue Marlin or milk fish from the Philippines make good fillet recipes.

Here are tips how to properly cook fish fillet:

1. Wash the fish.
2. Put salt or pepper or the herbs you desire. It depends on what recipe you'll be cooking. Some fillet recipes are marinated for a night or for some hours before cooking. Some can be cooked immediately. It depends on the recipe.
3. Beat 2 eggs. Set aside.
4. Prepare flour in a wide bowl or tray. Quantity depends how much fish you are cooking.
5. Get another big plate or tray.
6. Dip fillet in beaten eggs.
7. Roll in flour.
8. Lay coated fillet in one big plate.

Note: So it depends on the recipe you're cooking. You can fry the fillet in hot oil. After frying you set it aside to cook another recipe with sauce like soy fish steak, sweet and sour, or fillet in tomato sauce.

If fried, you can dip fillet in mayonnaise, catsup, or a dressing of your choice. Fried fish fillet recipes are good to eat with fries

You can also make fish fillet sandwich with lots of vegetables. This can be eaten with pasta or salad.

If you choose to cook fish fillet in sauce, let it simmer for a few minutes in the sauce and it will be luscious to the tongue. The egg is the secret there. So it's the egg first before the flour. You can also mix flour with cornstarch.

Flour is okay. Cornstarch makes it crispy. Ready- mix crumbs like Japanese mixes for frying can be used for fillets.

Fillet in Sweet Sour Sauce:

After coating the fillet as shown above,

Mix vinegar, sugar, 1 cup water, 1 cup soup stock, and some cornstarch in a bowl. Heat slowly. Put sliced onions, ginger, and bell peppers (optional: or canned pineapple). Mix with the sauce as to desired sweetness. Pour in the fried fillet. Cook slowly in fire until fillet gets soft. Don't overcook vegetables. Yum! You have your Fish Fillet in Sweet and Sour Sauce.

Option: You can buy ready sweet and sour sauce mix in supermarkets. You can just add the vegetables and the fillet to the sauce mix.

A digital meat thermometer is a great cooking tool to add to your arsenal of cooking supplies. These gadgets will definitely take the guesswork out of cooking. They work by measuring the internal temperature of your cooked meat or poultry (or even a casserole) to ensure that a safe temperature is reached, harmful bacteria has been destroyed and your food is cooked to perfection; and a digital meat thermometer will also prevent overcooking.

Most digital meat thermometers are accurate to within plus or minus one to two degrees Fahrenheit. Before you purchase a thermometer be certain that it is a meat thermometer and not a candy thermometer. Be sure that you look for a dial that is easy to read and that it is made with a clear, shatter-proof lens. Buying a stainless steel digital meat thermometer is important as well. You do not want to purchase plastic as some plastics contain formaldehyde, a chemical that can leech into your food if it gets too hot.

According to the US Department of Agriculture Food Safety and Inspection Service there are certain internal temperatures that food must reach in order to be considered safe to eat. The examples below are for well done food:

170 degrees for steaks, roasts and pork chops
165 degrees for chicken and turkey
165 degrees for egg dishes and casseroles
